Halloween party recipe: Pumpkin with brioche and warm maple sauce

 

The pumpkin brioche is a perfect dessert for a Halloween party. What's more, you can prepare everything the day before and only need to put the whole bake in the oven 45 minutes before serving. It tastes great with whipped cream or vanilla ice cream.

Ingredients for 8 people

 

2 loaves of brioche, cut into thin slices

250g soft butter

2 teaspoons nutmeg

2 tablespoons cinnamon

1 teaspoon cloves

1 teaspoon salt

5 eggs

4 egg yolks

100ml whipped cream

600ml whole milk

200g brown sugar

2 tablespoons vanilla extract

Maple cream (recipe below)

Pumpkin puree from a medium-sized pumpkin

 

Instructions

Grease a large baking tin.

Brush the brioche slices with butter and lay them out in the baking tin, overlapping each other.

In a large bowl, mix together the cinnamon, nutmeg, cloves, salt, eggs, egg yolks, cream, milk, brown sugar, vanilla and pumpkin puree.

Spread 3/4 of the mixture over the brioche.

Cover the rest and place in the fridge.

Place the baking tin in the fridge for a few hours.

After the resting time, remove from the fridge and prick holes in the surface with a fork.

Now spread the rest of the pumpkin mixture on top.

Preheat the oven to 250 degrees.

Bake the pumpkin brioche for about an hour.

Pour over the maple cream and serve warm.

 

Maple cream

500ml whipped cream

1/2 teaspoon salt

1 tablespoon cinnamon

1 teaspoon nutmeg

A bottle of maple syrup

100g sugar

 

Preparation of the maple cream

Mix all the ingredients together and cook in a large pan over a medium heat for 30 minutes, stirring occasionally.

Flavour to taste.
