Ingredients for about 1/2 litre ice cream

400ml kefir or buttermilk or natural yoghurt

Grated zest of one lemon

60ml lemon juice

125g maple syrup or honey or sugar

A dash of limoncello

 

Preparation in the ice cream machine

Mix all the ingredients together and beat until frothy. Place in the refrigerator for one hour. Place in the ice cream maker and prepare according to the instructions.

 

Preparation without ice cream maker

Mix the ingredients together and beat until frothy. Place in a freezable container and place in the freezer. Remove every hour and stir well and vigorously from the outside in. Repeat until the ice cream is firm.
