With this recipe, you can probably even win over convinced meat fans, because this vegetarian Bolognese tastes deceptively real, but is much healthier!
The finely chopped cauliflower gives the sauce its mince-like consistency, while the stock and sauce thickener add flavour.
Ingredients
250ml pureed tomatoes
1 garlic clove
1 small onion
about 1/4 of a fresh cauliflower
Water
Grained broth
Herbs of Provence
Sauce thickener for dark sauces
Preparation
Cut the garlic clove and onion into small cubes.
Finely chop the fresh cauliflower into small balls.
Put the tomato puree and a little water in a pan and heat up.
Add the garlic, diced onion and cauliflower, cover and simmer for about 10 minutes.
Season with herbes de Provence and vegetable stock to taste and simmer for a further 5 minutes.
Thicken the sauce with sauce thickener according to the packet instructions.
Serve the 'fake' Bolognese sauce with spaghetti and parmesan.
