Ingredients for one portion of boiled eggs in mustard sauce
3 medium-sized potatoes
2 eggs
1 tablespoon mustard
1 tablespoon of crème fraîche or sour cream
1 small onion
some oil
Salt
2 tablespoons of water
Parsley
Preparation of boiled eggs in mustard sauce
Quarter the potatoes and cook in salted water for 20 minutes until soft.
Boil the eggs for 5 to 10 minutes depending on the flavour and then rinse with cold water.
Finely chop the onion and fry briefly in the oil.
Mix the mustard with the crème fraîche and bring to the boil briefly on the hob or in the microwave.
Add the onions to the mustard sauce.
Arrange the potatoes on a plate.
Peel the eggs and place on the plate.
Pour the mustard sauce over the potatoes.
Sprinkle the parsley over the potatoes.
About 350 calories.
