
Coffee is an aromatic drink that is naturally rich in caffeine. The coffee bean contains organic acids that influence the taste, aroma and flavour.
One fresh coffee bean contains
- Water, between 6 and 13%. The water evaporates during roasting.
- Bold, 15 to 20%.
- Proteins. Some of the 11% proteins contained in the fresh coffee bean disappear during the roasting process.
- Minerals. Coffee beans contain small amounts of potassium, magnesium, calcium and phosphorus.
- alkaloids. The main exponent of this organic substance is caffeine. Arabica coffee contains 1 to 1.5% of caffeine, while Robusta coffee contains twice this amount.
