Various substances in food are known as antioxidants. These are known to fight free radicals, which attack the body's cells and can cause cancer.

Free radicals cause oxidation in the body. Antioxidants neutralise the oxidising properties and thus protect the body's cells from damage.

In addition to vitamins, certain minerals and phytochemicals can also have an antioxidant effect. In the case of vitamins, vitamins A, C and E and beta-carotene are the main antioxidants.

In addition to vitamins, selenium is known as an antioxidant among minerals. Some carotenoids in secondary plant substances found in fruit and vegetables are also antioxidants.
Secondary plant substances (phytochemicals) are the substances that give fruit and vegetables their colour. These include, for example, lycotin, lutein and zeaxanthin.
