Is every beer carbonated? And why is that the case? All beer is sold with carbon dioxide. The carbon dioxide gets into the beer either through natural carbonation or by adding carbon dioxide to the drink later. The beer absorbs the carbon dioxide and becomes fizzy.
How does the beer get carbonated
Natural carbonation, when carbon dioxide is added to a liquid, occurs during the beer fermentation process. During fermentation, alcohol and carbon dioxide are produced while the brewer's yeast processes the sugar in the beer wort. Most of the carbon dioxide escapes during the fermentation process, but when fermentation is almost complete, the beer is poured into tightly sealed containers that hold the rest of the carbon dioxide in the liquid.
Another method of natural carbonation is to add carbon dioxide to the fermented beer in the bottle. The beer is first fully fermented and left unfiltered, leaving active yeast residues in the liquid. A little sugar is added when the beer is poured into the bottles and the bottles are tightly sealed. The yeast residues react with the sugar and release carbon dioxide, which is absorbed by the beer. When the beer is carbonated, it first ferments completely and is then filled into airtight containers. There, carbon dioxide is pumped into the beer and absorbed by the liquid.
How alcohol and carbon dioxide are formed from yeast
When the yeast encounters the wort for the first time, the glucose concentration in the beer is very high. The glucose enters the yeast by diffusion. As each glucose molecule enters the yeast, it is broken down in a 10-step process called glycolysis. The product of glycolysis is two three-carbon sugars, called pyruvates, and some ATP (adenosine triphosphate), which provides the yeast with energy and allows it to multiply. The two pyruvates are then converted by the yeast into carbon dioxide and ethanol (the alcohol in beer). This produces carbon dioxide in the beer.
