
Gazpacho is a traditional Spanish cold soup. The soup is very healthy and low in calories. Gazpacho is usually served with baguette bread as a starter.
Here is the recipe for the original Spanish gazpacho soup.
Ingredients for gazpacho (enough for 4 to 6 people):
- 1 cucumber
- 3 juicy tomatoes
- 1 large onion
- 2 cloves of garlic or 2 teaspoons of garlic powder
- 2 cups of strained tomatoes
- 1 pepper
- 3 tablespoons lemon juice or 1 tablespoon vinegar
- 1 to 2 teaspoons of soup seasoning
- Salt and pepper to taste
Instructions for gazpacho:
Peel the cucumber, remove the seeds and cut the cucumber into small pieces.
Finely chop the onion and garlic.
Dice the tomatoes and peppers.
Place the cucumber pieces, tomato, onion, garlic, pepper and the tomato purée in a blender.
Add the lemon or vinegar, soup seasoning, salt and pepper.
Switch on the blender for about 10 seconds.
Flavour and season if necessary.
Place the finished soup in the fridge for at least 2 hours.
Serve cold with white baguette bread.
