It is not always a good idea to put a lid on a pot or pan, as the lid prevents air circulation, which can cause fried food to burn. You can prevent fat splashes by placing a sufficiently large metal sieve on the pan. The holes in the sieve allow excess heat to escape, but the splattering oil remains trapped. However, remove the metal sieve with oven gloves as it naturally gets very hot.
