Can you freeze kefir?

If you are unable to look after your kefir for a longer period of time, you can store it in the fridge. The kefir fungus is placed in the fridge with two thirds water and one third milk, as it is not as active there. It can be stored there for up to three weeks, although it then needs a few weeks to recover and loses some of its flavour.

You can also keep it in the freezer. Put some of it in a freezer bag and freeze it. Place the kefir in the fridge to defrost. Just like storing it in the fridge, it takes a few weeks for the kefir to regain its full strength and flavour.
