Small amounts of caffeine are also found in cocoa and lemonade. What does caffeine taste like, and does decaffeinated coffee taste different?<br><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Caffeine is bitter. There is a type of root beer (Barg's Root Beer) to which caffeine is added as a bitter flavouring to give the drink its unique aroma. Most decaffeinated coffees taste milder and lighter than normal coffee, as the bitter caffeine has been removed. Other bitter substances are added to some decaffeinated coffees to match the flavour of the caffeinated coffee.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A slightly bitter aftertaste is noticeable in drinks containing lemonade, which comes from the caffeine. If sugar or sweeteners are added to caffeinated drinks, the bitter flavour is weakened.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What does caffeine taste like <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pure caffeine is very bitter, however, caffeine in coffee only accounts for about 10-20 % of the total bitterness of coffee, the rest comes from other alkaloids and the formation of secondary compounds (e.g. chlorogenic acid, denatured proteins, phenylindanes, etc.) produced during roasting.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">What does caffeine taste like on its own: On its own, it tastes bitter, alkaline and slightly soapy. In coffee, cola and other beverages, it contributes to the overall flavour and also reacts with other ingredients to create new flavours. Removing caffeine from coffee or cola changes the flavour of the drink because the resulting products lack the bitterness of the caffeine. Decaffeinated coffee usually doesn't taste much different, just a little lighter. If you like the flavour of a dark, strong roast, you probably won't like decaffeinated coffee as much. On the other hand, if you like a light roast, you may prefer the flavour of decaffeinated coffee.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The origin of the beans, the roasting process and the way in which the beans are ground mean that there are already major differences in flavour between coffee products. If you don't like the flavour of a decaffeinated product, it doesn't mean that they all taste any less good. From planting, harvesting and purchasing, coffee beans go through this typical series of steps to give their best.<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">How is caffeine removed?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Caffeine is often added to cola, but also occurs naturally in the leaf extracts used as flavourings. If caffeine is omitted as an ingredient, others must be added to approximate the original flavour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Removing caffeine from coffee is more complicated, as the alkaloid is a component of the coffee bean. The two main methods for decaffeinating coffee are the Swiss water bath (SWB) and the ethyl acetate wash (EA).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In the SWB process, coffee is decaffeinated by osmosis in a water bath. Soaking the beans can remove flavour and aroma as well as caffeine, so the coffee beans are often soaked in water enriched with decaffeinated green coffee extract. The end product is a decaffeinated coffee with a (milder) flavour than the original bean, plus the flavour of the coffee extract.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In the EA process, caffeine is extracted from the beans using the volatile organic chemical ethyl acetate. The chemical evaporates and any residue is burnt off during the roasting process.
