These are mostly chemical-based acids, but can also consist of various salts, for example.<\/p>\n<p>They are used in a wide range of applications, from meat, fish and sausage products to bread, fruit preparations, sauces and spreads, ready meals and mayonnaise, ketchup and the like.<\/p>\n<p><!--more--><\/p>\n<p>The purpose of preservatives is on the one hand to extend the shelf life of particularly perishable products, i.e. to delay their infestation by mould and bacteria.<\/p>\n<p>On the other hand, preservatives can influence the appearance of a product in such a way that it appears more attractive to the consumer, according to the manufacturers, who claim to have had this confirmed in consumer surveys.<\/p>\n<p>As they are used particularly in industrially manufactured products, their area of application is no longer limited to perishable products, but also ensures a very long shelf life for products in bags and packages, which can thus be preserved for several years.<\/p>\n<p>However, since the \"risks and side effects\" became known, consumers have rightly taken a critical view of preservatives.<\/p>\n<p>The trend is moving towards natural and unprocessed foods that should still be available in the supermarket.  More and more products have been successfully converted by manufacturers, so bread labelled \"no added preservatives\" is fortunately already relatively common.<\/p>\n<p>Another reason for the use of preservatives is the long transport routes of a product, especially of course if they are imported.  Here too, however, consumers are more on their guard and many are of the opinion that cheap is not necessarily better and that profiteering should not be carried out on the back of the consumer.<\/p>\n<p>But are preservatives harmful?<\/p>\n<p>A whole range of preservatives are authorised for food in the EU, which are usually labelled with E and a three-digit number, sometimes also with their specific name, such as benzoic acid or sorbic acid.<\/p>\n<p>According to studies, not all of them are harmful; those between E200 to E203 and E236 to E238 are considered harmless.<\/p>\n<p>However, the numbers E210 to E233 are more problematic, as they are said to cause headaches, nausea, diarrhoea and even allergies.  Babies and children are particularly at risk, but adults can also experience side effects.<\/p>\n<p>Fortunately, there are very strict guidelines for baby food that prohibit these ingredients, but you still have to ask yourself why they are still authorised for the rest of the population.  Allergies can develop at any age and the risk is certainly increased by the consumption of these products.<\/p>\n<p>It becomes particularly critical when the following preservatives are mentioned, as they are suspected of being carcinogenic.  E249 to E252, which stand for potassium and sodium nitrite and nitrate and can be found in cheese, fish and (cured) meat products, promote the formation of nitrosamines, which in turn can cause cancer.<\/p>\n<p>The fact that such substances are still authorised and can still be found in food is an impertinence and irresponsible.
