Scientists estimate that around a third of all cancers are directly linked to diet. It is believed that many types of cancer can be prevented through proper nutrition.

This should be included in the nutrition plan:

Citrus fruits, other fresh fruit, dark green or yellow vegetables contain vitamin C, beta-carotenes, bioflavonoids and cancer-preventing substances.

Wholemeal bread and wholemeal products as well as fibre-rich foods promote bowel function and thus protect against bowel cancer.

This should be restricted:

High-fat food, especially saturated fatty acids. A high-fat diet and being overweight increases the risk of bowel cancer, prostate cancer, uterine cancer and skin cancer. No more than 30% of daily calories should come from fat. It often requires only minor changes to the diet, e.g. lean meat instead of high-fat meat, cutting out fat, vegetarian meals three times a week, cooking with less fat (steaming or baking instead of frying and deep-frying), reducing high-fat foods such as butter, margarine, mayonnaise and oil.

Alcoholic beverages. Alcohol abuse and heavy consumption of alcohol promotes mouth, larynx, oesophagus and liver cancer. Excessive drinking of alcoholic beverages prevents the absorption of cancer-protecting beta-carotenes. Alcohol also deprives the body of folic acid, thiamine and other B vitamins as well as selenium. Folic acid prevents the spread of cancer cells. A low folic acid level increases the risk of cervical cancer. Folic acid supplements slow down the proliferation of other precancerous cells.

Cured, smoked, fermented and charcoal-grilled food

People who eat large amounts of smoked, grilled and pickled food have a higher percentage of stomach and oesophageal cancer. Smoked food contains carcinogens (cancer-causing agents). The salt in pickled food can attack the stomach wall and promote the growth of tumours. Nitrites, which are commonly found in bacon and sausage as well as in industrially processed meat, can form nitrosamines, which are known carcinogens. If these foods are consumed in combination with vitamin C and E-rich foods, the formation of nitrosamines is reduced.

This should be avoided:

Food that contains residues of pesticides and pollutants.

It is becoming increasingly clear that elements of the diet promote the formation and development of cancer, while others slow down or stop the growth of cancer tumours.
