With a little trick, fish from the freezer can taste as if it has just been caught.

Simply take the frozen fish and place it in a milk bath until it has defrosted. The milk brings back the fresh flavour of the fish. It is important that the fish is still frozen when it is placed in the milk and that the milk is cold in the fridge.

The fish must be placed in the milk bath in good time so that it can defrost completely; defrosting takes about 3 hours. Then prepare the fish as usual.
