
There are numerous variations of masala chai, as the Indians call their spiced tea. Each family has its own blend of spices, but they are all sweet, hot and strongly flavoured. There are spice blends that promote a good mood, calming or digestive preparations.
This is how to prepare genuine Indian spiced tea according to a classic recipe:
Ingredients for one pot of masala chai
6 cups of water
4 cups of milk
6 cardamom pods
4 cloves
1 tablespoon fennel
1 teaspoon aniseed
1 cinnamon stick
½ teaspoon chopped ginger
6 tablespoons sugar or honey
4 tablespoons Assam tea
Preparation of one pot of masala chai
Bring the water, milk, cardamom, cloves, fennel, aniseed, cinnamon stick and ginger to the boil in a pan. Stir regularly and leave to boil for one minute. Add the sugar or honey and stir again.
Pour in the Assam tea and bring to the boil, then leave to infuse over a low heat for 15 minutes.
Now pour the finished spiced tea through a sieve directly into the tea glasses or teapot.
