Pasta cools very quickly after it is removed from the pot. By the time the finished pasta dish is served, the pasta is often already cold while the sauce is still hot.

To keep the pasta hot longer before serving, heat the plate or serving bowl first, for example with hot water or in the oven.

The cooked pasta should not remain in the hot water for too long, otherwise it will become too soft. Instead, place the drained noodles in hot water with the colander for a few seconds just before serving. Then remove the colander with the noodles, drain briefly and serve immediately with the sauce.
