You don't necessarily need preserving jars and special equipment for preserving. Pretty much any kind of vegetable can be preserved in a very simple way, using the same process that is used to make jam.

How to cook vegetables quickly, preserve vitamins and keep them tasty

First of all, you need normal jam jars of any size. The only important thing is that they have a well-fitting, well-sealing lid. These jars and the lids must be rinsed thoroughly and placed in boiling water for a few minutes to sterilise them.

Meanwhile, wash the vegetables and cut them into small pieces. Put the vegetables in a saucepan and add enough water and vegetable stock. If you like, you can also add a few cloves of garlic and rosemary.

Now cook the vegetables normally in the pot, about 15 to 20 minutes.

When the vegetables are cooked, carefully remove the jam jars from the hot water (wearing a glove so you don't burn yourself!) and place them in a row on the worktop.

Now fill the still boiling hot vegetables with the broth into the jars, ideally using a spoon to press down nicely in the jar so that no air bubbles remain inside.

Fill the broth all the way up to the rim and screw the jam jar down tightly, as tight as you can. Then turn the well-sealed jars upside down to cool. They must not touch each other. Only when they have cooled down completely, turn the jars upside down again to store them.

If there is any leftover stock in the pot, you do not need to pour it away, as it is very suitable for a fresh soup.

With this quick and easy method, you can preserve everything from spinach and chard to tomatoes. During storage, the flavour of the rosemary, garlic and vegetable stock infuses beautifully into the vegetable pieces and tastes wonderful straight from the jar!

Due to the short cooking time, the vitamins are largely preserved. As with jam, the jar closes completely airtight when cooled.

Whisky is alcohol distilled from fermented grain and then stored in wooden barrels to mature. The grain varies from wheat, rye barley to corn. Different variations are Irish whisky, Scotch whisky and American whisky. Bourbon is the most popular type of American whisky.

Bourbon is whisky that is produced in a specific, precisely defined way. It must be produced in America and consist of 51% corn. While other types of whisky can be stored in oak barrels of any kind, bourbon must be stored in new, charred oak barrels. In addition, bourbon must be distilled to 160 proof and filled into the barrels at 125 proof*. All other whisky must be distilled to no more than 190 proof.

The liquid must be bottled and stored for at least 4 years in accordance with the guidelines under U.S. supervision.

When bottling, the liquid must not be less than 80 proof. It goes without saying that authentic bourbon must not contain any colourings, flavour enhancers or other additives.

*Proof is a unit of measurement for the alcohol content in a liquid. 100 proof corresponds to 57.15 % Alc./vol (volume per cent).

Sushi has some nutrients that are important for the human body.Depending on the type and ingredients in sushi, it can contain a lot of protein. This is especially true for sushi with tuna or salmon. Unfortunately, however, sushi has some disadvantages and should therefore only be eaten in moderation.

What is healthy in sushi

Most sushi contains fish and therefore omega-3 fatty acids. These are good for the heart and circulation, have natural anti-inflammatory qualities and play a role in brain function. The best sources of omega-3 are salmon, trout and tuna.

As already mentioned, sushi can contain proteins. Depending on the processing and ingredients, the amount of protein is not enough for the daily requirement, or you would have to eat a lot of sushi to cover it.

What is unhealthy in sushi

A significant drawback in sushi is the high sushi roll with lobster and shrimp, or with tempura, with calamari and with crab, for example, can contain up to 1000mg of sodium, which is already almost half the recommended daily amount for healthy people. High blood pressure and other health factors limit some people's daily sodium requirement to 1500mg per day.

Most sushi is made with refined rice, i.e. white rice, and therefore contains a lot of carbohydrates. This can cause blood sugar levels to spike and you get hungry again more quickly.

Some types of fish can contain a lot of mercury. Fish species with lower mercury content are salmon or shrimp.

The fact that sushi is eaten raw makes the ingredients susceptible to bacterial contamination. If you want to enjoy sushi at the sushi bar, make sure that it is very clean and that the ingredients are always fresh.

While algae are generally rich in vitamins and minerals, they often contain a lot of monosodium glutamate, a controversial amino acid suspected of causing headaches and discomfort.

Sashimi is healthier

If possible, eat sushi with brown rice, fresh salmon, tuna or trout and vegetables. The healthiest, however, is sashami, fine strips of high-quality raw fish without rice. Most of the sodium is found in the rice because it is prepared with very salty sauces, so sashami have far less sodium.

Guidelines for healthier sushi

Avoid fried food, like tempura.

Avoid sushi with teriyaki sauce and mayonnaise.

I'd rather have sashami than sushi.

If sushi, then with brown rice.

For lots of protein, have sushi with salmon and tuna.

Make sure the sushi bar is busy, so the ingredients are always fresh.

Peppermint tea is a healthy and tasty herbal tea that you should feel free to drink between meals as a thirst quencher. The health benefits of peppermint tea are far-reaching, thanks to its basic element menthol.

Peppermint tea is a herbal infusion of fresh or dried peppermint leaves. The intensely fragrant drink is caffeine-free and can therefore be drunk safely at any time of day. Peppermint originates from Europe, but is enjoyed worldwide and valued for its medicinal qualities.

What are the health benefits of peppermint tea?

Peppermint soothes stomach complaints

Peppermint oil has been used by herbal medicine practitioners for thousands of years to relieve discomfort related to the stomach or intestines. As a tea infusion, peppermint supports the reduction of flatulence in the body and thus relieves stomach pain caused by flatulence. In addition, peppermint stimulates the production of bile and thus ensures faster and better digestion of food. This is probably why some cultures like to drink peppermint liqueur after a heavy meal.

Peppermint tea not only transports gases through the body more quickly, but also relieves cramping pains caused by flatulence and indigestion. This is due to the soothing effect of peppermint oil on the intestinal tract and the muscles in the digestive tract. In cases of diarrhoea, stomach irritation or constipation, peppermint tea helps optimise the entire digestive system.

Good for nausea and vomiting

Peppermint tea has a calming and anti-inflammatory effect on the stomach and relieves cramps in acute nausea, even travel sickness. This often returns the stomach to its normal state more quickly and reduces the feeling of nausea and stomach cramps.

Breathing problems due to a cold

As an antispasmodic, soothing and anti-inflammatory drink, peppermint tea helps with coughs and sore throats. The mint has a relaxing effect on the chest and throat muscles and thus relieves the symptoms of colds and flu.

Antipyretic

A cup of hot peppermint tea makes the body sweat externally, while the menthol cools it down from the inside at the same time. This "breaks" a fever more quickly and normalises the body temperature.

Good for the immune system

The antibacterial properties of peppermint not only provide relief from fever, cold or cough, but also help the body fight off illness by strengthening the immune system. Peppermint tea contains small amounts of vitamin B, potassium, antioxidants and calcium, all of which have a strengthening effect on the immune system.

Peppermint against stress

Peppermint tea not only has a calming and antispasmodic effect on the body and its organs. It also has a mentally relaxing effect on people suffering from acute stress. The anti-inflammatory properties of mint reduce blood pressure and body temperature, helping to relax the body and mind. This is one of the main reasons why peppermint oil is so popular in aromatherapy.

Bad breath and halitosis

The strong menthol taste and the antibacterial effect make peppermint tea ideal in the fight against bad breath. The bacteria that cause bad breath are killed more quickly, while the menthol freshens the breath.

Lose weight with peppermint tea

Peppermint oil has an appetite suppressant effect and thus helps against overeating. This is why peppermint tea is excellent for supporting diets.

Peppermint tea side effect

Peppermint tea is a strong herbal tea and can have side effects if consumed in excess. Possible side effects are allergy or heartburn. Both are usually minor. Nevertheless, especially if you are allergic, it is important to talk to your doctor about it.

Certain foods have a high thermogenic effect, which means that the digestion of these foods alone consumes many calories. For example, when taking 200 calories of protein, the body uses about 40 to 70 calories of it just for digestion. These are the foods with a particularly high thermogenic effect.

Wholemeal

The organism consumes about twice as many calories to digest wholemeal products as it does when eating the same product without wholemeal. Good calorie burners are oatmeal and wholemeal rice.

Lean meat

Proteins have a high thermogenic effect. When eating 300 calories of lean meat, the body uses up to a third of it for utilisation.

Green tea

Green tea boosts the metabolism and thus accelerates the burning of calories. However, since green tea contains caffeine, you should not drink more than four cups a day.

Legumes

Pulses are very rich in protein and thus have a high thermogenic effect. In addition, they are rich in iron, which is necessary for the metabolic process. A lack of iron slows down the metabolism, so in order to function effectively, one should pay attention to an iron-rich diet.

Hot spices

Hot peppers, cayenne and chilli, for example, increase the body temperature during digestion and thus help to burn fat. Simply spice up your normal food and you will consume more calories!

Mate tea is one of the six most common stimulants in the world, along with coffee, tea, cocoa, guarana and kola nut. Among them, it is the clear winner in terms of the balance of energising substances and nutrients. For centuries, mate tea has been appreciated by South Americans, and its popularity has spread around the world. But because of the high caffeine content in mate tea, there are many sceptics, so how healthy is mate tea?

What is Mate Tea

Mate is drunk as a tea drink in Europe and belongs to the category of herbal teas.

Mate is prepared from the leaves of the mate tree (Ilex Paraguariensis), which grows in the rainforest in Argentina, Brazil and Paraguay. The leaves of the tree have a natural content of 24 vitamins and minerals, 15 amino acids and abundant antioxidants. According to a study from the 1960s, mate contains practically all the vitamins necessary for life.

Besides these nutrients, mate contains caffeine, theophylline and theobromine, the well-known stimulants in coffee, tea and chocolate. Unlike black or green tea, mate contains little tannin and therefore does not become bitter when brewed very strongly.

Coffee contains oils and acids that can upset sensitive people's stomachs. Mate does not have these oils and acids and is therefore much easier on the stomach.

As with coffee, particularly high quality mate is obtained when the plants are cultivated in the shade. Due to the longer ripening period, the leaves contain more nutrients and aromas than when grown in the sun.

What is healthy about mate tea

Mate tea contains more nutrients than green tea. In fact, mate has been used for centuries in South America for a variety of medicines.

Mate tea contains the natural vitamins A, C, E, B1, B2, niacin, B5 and B Complex, the minerals calcium, manganese, iron, selenium, potassium, magnesium, phosphorus and zinc as well as carotene, fatty acids, chlorophyll, flavonol, polyphenol, trace elements, inositol, pantothenic acid, tannin and 15 amino acids.

In addition, mate contains many times more antioxidants than other energy drinks, more even than green tea.

The drink is known as a remedy for fatigue, to promote weight loss, as a mild antidepressant and effective against headaches.

However, like coffee and tea, mate tea should be enjoyed in moderation and not in masses. One to two cups per day are sufficient. It is not recommended to enjoy mate tea at the same time as cigarettes, as this combination is suspected of being carcinogenic.

How is mate tea made

The leaves are dried at low temperatures to preserve the nutrients. Afterwards, the leaves are left to mature in wooden barrels, similar to wine making, so that the flavour and aromas can develop. The tender stems of the leaves are also dried, as they give the drink a slightly sweet taste.

There is black tea, yellow tea, green tea, white tea, red tea, blue tea and rooibos. What exactly is the difference between the individual types of tea and from which plant are they made?

White tea, yellow tea, green tea and black tea are brewed from the same plant, i.e. from the leaves or flowers of Camellia Sinensis. The difference lies in how the leaves are processed from which the tea is brewed. This means that after the parts of the plant have been harvested, they can be processed into any of these types of tea. Generally, the tea varieties got their names (at least in the western world) from the colour of the dried tea leaves.

White tea is the least treated during processing, so it is largely natural. For white tea, the leaves and flowers are not oxidised, thus retaining their natural antioxidants. However, the result is a weaker brew; white tea contains the least aroma, colour or caffeine. The plant parts are left to wilt in natural sunlight so that the dried leaves and flowers show fine whitish hairs, which is where the tea gets its name. White tea tastes slightly sweet or fruity.

Green tea is slightly oxidised, either by steaming or roasting. The process gives the tea more flavour and develops caffeine. Its aroma is very herbal and earthy with a slightly sweet nuance. The slight oxidation gives the green tea a strong, green-yellow colour. Only the leaves of the tea plant are used for processing into green tea.

Black tea is more oxidised than green tea and therefore has the strongest aroma and colour and contains the most caffeine.

Blue tea is not made from Camellia Sinensis, but from flavourful blue Butterfly Pea Flowers. Blue tea has a rich flavour and has a regenerating effect. It has a slightly bluish colour. It contains no caffeine and is medicinally valuable.

Yellow tea is made by withering the leaves in a pile until they turn yellow. Yellow tea usually has a rather weak aroma and is the least known.

Red tea refers to a drink made from a different plant, not the tea plant. Red tea, also called rooibos or redbush, comes from South Africa and is produced from the leaves of the bush Aspalathus linearis. The bush itself is not red, but rather yellowish, but the brew made from the needle-like leaves has a reddish colour. Rooibos contains no caffeine and can contain up to ten times as many antioxidants as conventional tea.

Ready-made meals and fast food are of course very convenient for in-between and on the go. However, many of these foods contain ingredients that do more harm than good to the body. Here are the 5 foods you should avoid:

Lemonades and other soft drinks

Soft drink refers to soft drinks with added sugar or sweeteners, including nectars, sports drinks and energy drinks. Frequent drinking of sweetened drinks contributes to obesity and damages the metabolism and liver.

Equally refreshing in summer is cold mineral water with a dash of fruit juice, preferably lemon.

Light drinks

Diet sodas usually contain aspartame, saccharin or sucralose. With long-term daily consumption, these sweeteners increase the risk of stroke or heart attack. In addition, the reduced calorie count often deceives consumers and tempts them to consume more.

White bread

When whole grains are processed into white flour, about 80% of the nutrients from the grain are lost. Numerous experiments and observations have found that animals and humans who eat a diet high in white flour products gain weight faster than those who eat more whole grain products. In addition, white bread makes you feel full less quickly, so you tend to eat more of it.

Artificial trans fats

Artificial trans fats are formed when vegetable oil is hardened under high temperatures and pressure. These trans fats are found in margarine, pastries and cakes. The consumption of trans fats increases the "bad" cholesterol in the blood and lowers the "good" cholesterol at the same time. The content of trans fats is indicated in many foods, so one should make sure that as few trans fats as possible are contained.

Industrially processed meat

Regular consumption of industrially processed meat has been shown to increase the risk of certain cancers. Processing uses sodium nitrite and sodium nitrate for preservation, which may be converted in the body into carcinogenic compounds such as nitrosamine. Industrially processed meat includes sausages, bacon and moulded meat.

Varietal coffees are coffees that come from a specific geographical location. This can be a specific community, a region, a plantation or a specific blend of coffee beans from just one country that are a symbol of quality thanks to their climate, location and soil.

Usually, single-varietal coffees bear the name of their place of origin.

The respective place of origin of the coffee beans gives varietal coffees from only one geographical location a characteristic flavour. Depending on the location of the coffee plantation and its climatic conditions, each coffee variety has a unique aroma according to its region.

The coffees differ in aroma, acidity, bitterness and fullness. By using different single-origin coffees with certain characteristics, you can create coffee blends with specific aromas. For example, if you blend a Kenyan coffee with a coffee from Ethiopia in the ratio 60% / 40%, you get a coffee with a dense and chocolaty aroma.
